On average you can expect 80 to 125 pounds to come to you in freezer packages. That’s a big range, but the animals vary in size.

If you buy a whole beeve (reserve about 20 cubic feet of freezer space) a half (10 cubic feet) or a split half (reserve 5 cubic feet). Florida law allows us to sell whole animals to up to 4 people. We can’t sell pieces because the meat isn’t harvested in a USDA inspected slaughter house (where the inspector is there all the time and looking at every carcass that comes through). The inspectors are reserved for big factory slaughter houses that process hundreds or thousands of animals per shift. With that kind of volume, we can't be sure that the beeves that we might bring to a larger facility would be the same ones you would pick up. Larger processors are not as likely to dry age beef -- and that is one of the key's to tender, delicious grass-fed beef.
