Grass-fed Beef pricing
Our Grass-fed, dry-aged Beef is sold out for this 2008, but we are taking reservations for next year’s crop. Florida law allows up to 4 individuals to own a single cow. Your cow, or quarter of a cow lives in Cognito, then at harvest time, as a courtesy, we drive your beef to the processor and then you pick it up when it is ready. Currently we’re using a processor in Green Cove Springs, Florida. If you want to reserve a split half (quarter), half or whole beef, please let us know. Prices for 2009 is $4 per pound for a whole beef, $4.25 per half, $4.50 per split quarter -- all are "hanging weight". A $100 deposit per quarter is required when you place your order, and the balance is due before you pick up the beef from the processor.
Hanging weight is how much the beef weighs as a split carcass after being harvested. The halves are dry-aged for about 2 weeks, and then the butcher cuts and vacuum packs to your specifications (make the T-bones 2” thick – or “keep the short ribs” instead of turning them into hamburger). On average, they hang at 650 pounds. Of that hanging weight, about about 70% to 65%, or 455 pounds will come back in freezer packages. Using these numbers – 650 times $4 is $2,600 (that’s the whole cow). $5.71 is the appoximate "in the freezer" per pound cost of a whole grass-fed dry-aged beef cut to your specifications.
A split half (quarter that includes part of the front and part of the back half – 163 pounds of hanging beef – or about 115 pounds of freezer meat) is $733.50. That's appoximately $6.38 a pound for steaks, roasts and burgers from one-quarter of a grass-fed, dry-aged beef cut to your specifications.
